Mandarin Orange, Cranberry, Nut Bread

Add this super tasty bread for a hearty breakfast!

Prep Time: 20mins. ❖ Bake Time: 35-45mins. ❖ Serves: 10-12

Dry Ingredients:

  • 2 C. all-purpose flour
  • ½ C. sugar
  • ½ tsp. baking soda
  • 2-½ tsp. baking powder
  • 1 Tbsp. orange zest
  • ½ C. chopped almonds (or pecans/ walnuts, if you prefer)

Wet Ingredients:

  • ¾ C. dried cranberries or 1-½ C. fresh
  • 1 tsp. orange extract
  • ½ C. orange juice
  • 2 Tbsp. canola oil
  • 1 egg
  • 1 can (12oz.) Mandarin orange segments

Directions:

Preheat oven to 350°F. Prepare large bundt pan or two 9” loaf pans by misting with cooking spray.

In a large mixing bowl, combine dry ingredients until thoroughly mixed.

Combine first 5 wet ingredients in a blender and mix until cranberries are chopped into small bits. Then, add Mandarin orange segments & pulse just until segments are broken.

Fold wet ingredients into dry ingredients just until flour disappears...do not over mix!

Gently pour batter into greased pan. Bake for 20-30 minutes at 350℉. Then, reduce oven temperature to 325℉. Continue baking until lightly browned–about 15 additional minutes.
