Mrs. Beazley's Sweet and Savory Cornmeal Muffins

1 3/4 cup unbleached flour

2/3 cup granulated sugar

1 cup cornmeal

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 cup milk

3/4 cup buttermilk

2 large eggs lightly beaten

1/3 cup olive oil

1(4 ounce) can chopped green chilies

3 tablespoons meltrd butter

Preheat oven to 350*F. Spray muffin tin with vegetable spray.

Combine flour, sugar, cornmeal, baking powder and baking soda in bowl. In another small bowl combine milk, buttermilk, eggs and olive oil;mix well. Pour liquid ingredients into dry and stir until just blended.

Distribute batter evenly in 12 cup muffin tin.

Bake 18-20 minutes or until toothpick comes out clean. Remove from oven , cool slightly and serve warm with honey and butter.
