Kathy’s Apple-Blueberry Crisp

  • 4 C. tart apples*, peeled & sliced into chunks
  • 2 C. blueberries, fresh or frozen*
  • ¼ C. light brown sugar
  • ¼ C. orange juice
  • 2 Tbsp. all-purpose flour
  • 1 tsp. ground cinnamon
  • pinch of salt


  • 1 C. old-fashioned oats
  • ½ C. light brown sugar
  • 2 Tbsp. all-purpose flour
  • ½ tsp. ground cinnamon
  • ⅓ C. cold butter, cubed
  • pinch of salt


Preheat oven to 350º F. Prepare a 9” pie plate or square baking dish with non-stick cooking spray.

In a large bowl add apples, blueberries, orange juice, brown sugar, flour, cinnamon and salt. Toss to combine. Then scoop into prepared pie plate, spreading evenly.

For topping, mix together oats, brown sugar, flour and cinnamon. Using a pastry blender or fork, cut butter into the mix until crumbly. Sprinkle over fruit to cover.

Bake in preheated oven for 30-35 mins. until golden brown and fruit is cooked through.

Serve immediately with a hot mug of Beazley House Blend coffee. – ENJOY!!

*Cook’s Note: Use a mix of tart apples, like Granny Smith, McIntosh, Cortland or Gravensteins. For added blueberry kick, add in a ½ C. of dried blueberries.

This dish is also a hit at dessert with a scoop of vanilla ice cream, or a slice of sharp cheddar cheese.
