Ms. Vee’s Apple-Cranberry Bread Pudding

Beazley House Apple-Cranberry Bread Pudding

  • 1 C. sugar, plus 1 tsp. reserved
  • 2 C. orange juice
  • 2 C. milk (2%)
  • 5 large eggs
  • 2 tsp. vanilla extract
  • 2 tsp. ground cinnamon
  • ¼ tsp. ground cardamom
  • 4 Tbsp. butter (½ stick)
  • 8 slices Buttermilk bread, crusts removed & cut into ½” cubes
  • 3 apples (your choice), peeled & cut into ½” cubes
  • 2 C. whole fresh cranberries


Place rack in center of oven. Preheat oven to 350°F.

Prepare 8 individual ½-cup ramekins by misting with cooking spray.

Remove crust from the buttermilk bread and slice into ½” cubes. Peel and cube apples to roughly the same size. Toss bread cubes, apples and cranberries in mixing bowl.

In blender mix the first 8 ingredients and pour over the bread, apples and cranberries. Gently stir to combine.

Divide mixture equally into the 8 ramekins. Sprinkle puddings with reserved sugar and place on cookie sheet. Bake for 40 minutes or until set. Let cool 10 minutes before serving with your favorite syrup.

*Cook’s Note: Drizzle with a lemon glaze (½ C. powdered sugar + 1 Tbsp. lemon juice) or serve with your favorite vanilla ice cream for a decadent dessert. May also be prepared in a square baking dish if preferred.
