"Miss V" - Veronica

Veronica (or “Miss V” as we call her) has been an integral part of the Beazley House for 21 years. She starting as a teenager helping her mother, Virginia, clean rooms, and worked her way up. She effectively manages the Beazley House Bed & Breakfast Inn when Jim & Carol are away. This creation substitutes pecans in place of the usual walnuts. Served warm with a heaping helping of your favorite butter – delicious!

  • 3 medium ripe bananas, mashed
  • ½ C. canola oil
  • 1 C. sugar
  • 1 egg
  • ¼ tsp. salt
  • 1-½ C. flour
  • 1 tsp. baking soda
  • ½ C. chopped pecans – a little less is a little more


Preheat oven to 325℉.

In a large bowl mash bananas until creamy. Add canola oil, sugar, egg and stir to combine. Mix in the dry ingredients (salt, flour and baking soda). Finally, fold in the pecans.

Prepare 3 mini loaf pans (or large bundt pan) with non-stick spray.

Bake for about 1 hour. The loaved are done when a toothpick inserted comes out clean. The bread will be golden brown and delicious.

Cook’s Note: For a Vegan option replace egg with ⅓-cup of applesauce and allow a little extra baking time. Chocolate Chips can be substituted for pecans.
